Learn MoreProbably that to me there's not much difference between being at work, or having folks over. Both should be warm, enjoyable and safe. That I get to hangout at the pub all day, and not only give space for community but pay the bills for the last 16 years is amazing.
What is your favorite drink to make and why?Simple and quick. The point is to keep drinks in hands and the party going. As much fun as it is to introduce a kid to a Cosmo or a Manhatten Sour and have that be their go to cocktail for the next year or so, that's about as fancy as I'll go if it's halfway busy. I don't feel it's proper to spend 10min juicing, measuring, shaking and expressing for one cocktail while a dozen folks stand around needing a drink.
What would you do with the $20,000?If I win, that 20k will be the Skylark's new roof. We are proudly worker owned, having taken over from the old bosses (very good decent folks) about a year ago. The Skylark has been here 21 years and a pub since 1910, and we fully intend the Skylark to continue long after we're gone. https://plateonline.com/chefs-and-restaurants/how-former-bar-and-restaurant-workers-take-over-reins-owners https://www.chicagomag.com/chicago-magazine/february-2022/chicagos-best-neighborhood-bars/skylark-2/
