My favorite part of this industry is the confidence my guests have for me in experimenting with flavor and concept. Too many times I've been asked for the basic "green tea" or "vodka soda". That's when I ask if I may offer an upgraded version.... Most times I'm met with an excited, "sure!". I'll ask for allergies, and off to the land of possibilities! Should I have the occasional pallet disagreement, I ask questions, and adjust until I get that happy smile of approval. And then I am happy.

I call it a "Queen's Labyrinth", for it's a journey to the taste buds through florals, fruit, and herbs. Leaving people guessing the ingredients and becoming surprised to find out it's gin! It's a year-round, well balanced cocktail suited for any orientation, in any situation. Twenty thousand dollars these days isn't what it used to be. However, my daughter is off to college next year; so it will be a blessing to put towards her tuition.
